Spicy Cauliflower Tacos
This delicious recipe is brought to you by Nutritionist Caitie Davies. Vegan and gluten free* these mouth watering tacos are the perfect addition for summer bbqs or a fresh and nutritious lunch. Give them a go – they won’t disappoint!
*Tortillas can be with or without gluten.
Filling Ingredients
- 1 small cauliflower, chopped into small pieces
- 1 cup chickpeas
- 1 tsp chilli
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp crushed chilli flakes
- ¼ tsp dried oregano
- ½ tsp paprika
- 1 ½ tsp ground cumin
- 1 tsp salt
- 1 tsp pepper
- ½ tin of crushed tomatoes
- 1 small red onion
- 1 red capsicum
- Squeeze of sriracha (optional for extra spice)
Assembly:
- Soft tortillas
- Chopped fresh tomato and onion for salsa
- Mashed avocado
- Sriracha or chipotle mayonnaise drizzle (vegan options available)
- Coriander (optional)
Method:
- Combine all ingredients (except tomatoes) in a pan with a good drizzle of oil, and cook for 15mins. Add the crushed tomatoes and continue cooking for another 5 mins. 2
- Warm tortillas
- Fill tortillas with cauliflower and chickpea as little or as much as you like, before topping with salsa, fresh avocado, sriracha mayonnaise and coriander
