Spicy Cauliflower Tacos

This delicious recipe is brought to you by Nutritionist Caitie Davies. Vegan and gluten free* these mouth watering tacos are the perfect addition for summer bbqs or a fresh and nutritious lunch. Give them a go – they won’t disappoint!

*Tortillas can be with or without gluten.

Filling Ingredients

  • 1 small cauliflower, chopped into small pieces
  • 1 cup chickpeas 
  • 1 tsp chilli
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp crushed chilli flakes
  • ¼ tsp dried oregano
  • ½ tsp paprika
  • 1 ½ tsp ground cumin
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tin of crushed tomatoes 
  • 1 small red onion
  • 1 red capsicum
  • Squeeze of sriracha (optional for extra spice)

Assembly:

  • Soft tortillas
  • Chopped fresh tomato and onion for salsa
  • Mashed avocado
  • Sriracha or chipotle mayonnaise drizzle (vegan options available)
  • Coriander (optional)

Method:

  1. Combine all ingredients (except tomatoes) in a pan with a good drizzle of oil, and cook for 15mins.  Add the crushed tomatoes and continue cooking for another 5 mins. 2
  2. Warm tortillas
  3. Fill tortillas with cauliflower and chickpea as little or as much as you like, before topping with salsa, fresh avocado, sriracha mayonnaise and coriander
